Flavours of Korea: From Seoul to Singapore at Beach Road Kitchen, JW Marriott Singapore

When the scent of chili, garlic, and gochugaru fills the air, you know something extraordinary is brewing — or more precisely, fermenting.Last night, we stepped into Beach Road Kitchen at JW Marriott Singapore for an exclusive evening celebrating the Art of Kimchi, guided by master chefs flown in from JW Marriott Seoul.

The Art of Kimchi — A Hands-On Prelude


Before dinner, the experience began with a closed-door kimchi-making workshop.Executive Sous Chef Hwang Jong Min, Head Chef Yang Soon Ae, and Chef Bang Jin Su shared stories of fermentation passed down through generations — each chili-red jar telling its own tale of patience and preservation.


We rolled up our sleeves, seasoned napa cabbage, and discovered that perfect kimchi lies in rhythm — salt, rinse, season, seal — all guided by instinct and the balance of 오방 (Obang), the five colours that represent harmony in Korean culture.


“Fermentation isn’t just about flavour; it’s about life continuing,” one of the chefs said, smiling as we packed our jars.And just like that, dinner took on a deeper meaning — every bite connected us to something timeless.

Dinner Unfolds: Obang on the Plate


As the workshop closed, the evening transitioned into a specially curated Korean dinner — each dish a modern expression of traditional roots.Highlights included Pork Porchetta with Kimchi Stuffing, a playful fusion of Italian technique and Korean spice; BBQ Korean Pork Belly, glazed to perfection; and Korean Pancakes that carried the warmth of a Seoul street corner.


Every plate celebrated Obang — the five colours of balance — gold for earth, red for fire, blue for wood, white for metal, and black for water.The colours danced not only in the presentation but in the flavours — smoky, tangy, crisp, and comforting, all at once.

From Gwangju to Singapore — A Cultural Bridge


This collaboration drew inspiration from the Gwangju Kimchi Festival, Korea’s annual celebration of its most beloved fermented food. By bringing the experience to Singapore, JW Marriott created more than just a dinner; it became a bridge — connecting Seoul’s heritage with the vibrant dining scene of Singapore.


The chefs’ presence reminded us that food has no borders when shared with purpose and passion.

A Feast Beyond Taste


As the night drew to a close, we left with more than just full hearts and fuller stomachs — we carried with us our own jar of freshly made kimchi, a small piece of Korea to continue fermenting at home.


And that’s perhaps the true beauty of this event: to taste tradition, then carry it forward.

The Flavours of Korea Buffet


For those who missed the media preview, Beach Road Kitchen will continue its Flavours of Korea promotion from 7 to 23 November 2025, featuring an expanded buffet of Korean classics alongside the restaurant’s signature spread.
